Clover is a traditional light table mead of the most delicious sort. Only the very best clover honey will produce the finest vintage mead. The secret to good clover mead is in the maintenance of the delicate floral essences; any intrusion of other honey sources can diminish purity and flavour.
Mead production and fermentation began on the 15th July 2017. Being still in a liquid state the honey was easy to process into mead making by gentle warming. For a clover mead of such fine purity every effort was taken to preserve and enhance the delicate florals. Conditioning and aging in French oak casks continued for the following 16 months. This ensured a delicate aromatic mead true to the old-world method of this traditional style.
Very light and delicate, unspoiled honey sweetness, very smooth, warming and light with well balanced acidity. Slight vanilla and cream, truly mono-floral and well rounded; absolute pure honey essences with the depth of well-conditioned oak.
